One of the ways in which Pompeii is being restored is with replanting. Archeologists are working with botanists to identify the plants that would have being growing when Vesuvius erupted by making casts of the root systems left in the compacted ash and, amazingly, of leftover cooking scraps preserved in kitchen areas on the site. A product of this replanting is the Pompeii wine that is produced by the new vineyard in the grounds of the Villa dei Misteri using, they believe, the exact same grapes and trellis formation as they did in AD79.
